When I got my next-gen consoles, I was obviously very excited, but with the removal of the optical port on both consoles, it created a really difficult audio situation. And I finally have (what I consider) the most streamlined way to route your next-gen console audio from your consoles to both your stream and your own headsets (without wearing more than one headset).
If you only had one of the consoles that you were worried about in your setup, you would omit the switchers.
Something that probably seems flexible, but is essential to this system working is using an internal capture card, but if you try to use an external capture card (like an elgato HD60 S+) the sound and/or HDMI will not route all the way through. And you will be sad, just like I was before I realized that was the issue.
As far as the USB mic for console audio input, I haven't personally tested this out because I mostly play with friends and use Discord to talk, but you'd want to grab a microphone with a mute button built in, like the Blue Snowball.

I find that routing audio when streaming is one of the most overly complicated parts of setting stuff up. Like you need a PhD for some of these solutions. Glad you have yours how you want it. I'm still tinkering with mine a bit. 😁
